I love cheese. I am lactose intolerant. That means that cheese and my digestive system don’t work well together. If I want to avoid extra trips to the bathroom and embarrassing bodily noises, I have to pass on the cheese.
I was thrilled to get the option to review a cookbook on vegan cheese. I jumped right in and bought ingredients for a couple of recipes. While I love this book, I want to point out that making cheese, dairy-filled or dairy-free, is never actually easy.
The Spicy Nacho Cheese recipe wasn’t insanely difficult, but you need to make sure you follow the recipes exactly as they are if you want these cheeses to work out for you. I liked this cheese, but it doesn’t really taste “cheesy.” Some recipes will be more successful than others, though… and ingredients matter (the author may have picked different brands than I did, or used different vegetable sizes).
If you’ve been avoiding cheese because of dairy, for whatever reason, and you miss it – you should give the Super Easy Vegan Cheese Cookbook a try.
